This Crock Pot Ham and Bean Soup is the ultimate comfort food, bringing together hearty beans and savory ham in a rich, flavorful broth. Perfect for a cozy meal on a chilly day!
1 leftover ham bone with meat (or ham hocks, diced ham, or 1 lb. cooked sausage)
1 clove garlic, minced
1 teaspoon chili powder (optional)
Hot sauce or crushed red pepper to taste (optional)
Instructions
Rinse and drain the beans. Remove any debris and set the seasoning packet aside.
In a 6-quart crockpot, combine the beans, chicken broth, ham bone (or alternative), onion, garlic, and chili powder (if using). Do not add the lemon juice or diced tomatoes yet.
Set the crockpot to high and cook for 5 hours, or on low for 7-8 hours, until the beans are tender.
Once the beans are soft, remove the ham bone (if using). Chop any meat from the bone and return it to the crockpot. Stir in the diced tomatoes, seasoning packet, and lemon juice.
Cook for an additional 30 minutes. Adjust seasoning with salt, black pepper, and optional hot sauce or crushed red pepper to taste.
