  • 1 pound lean ground beef
  • ¾ cup chopped onion
  • ⅓ cup dried bread crumbs
  • ¼ cup barbecue sauce
  • 2 teaspoons chili powder
  • ¾ teaspoon salt
  • 1 egg, beaten
  • 1 package instant butter-flavored mashed potato mix
  • ⅔ cup evaporated milk
  • 1 tablespoon chopped parsley
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 cup cooked and crumbled bacon
  • ¼ cup crispy fried onions
  • ⅔ cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a 9×9-inch baking pan with cooking spray.
  2. In a large bowl, combine the ground beef, chopped onion, bread crumbs, barbecue sauce, chili powder, salt, and beaten egg. Press the meat mixture evenly into the bottom of the prepared pan.
  3. Bake the meatloaf uncovered in the preheated oven for 20 minutes. Carefully remove from the oven and drain off any excess grease.
  4. While the meatloaf is baking, prepare the instant mashed potatoes according to the package instructions. Mix the prepared potatoes with evaporated milk, parsley, butter, garlic powder, crumbled bacon, and crispy fried onions.
  5. Spread the potato mixture evenly over the baked meatloaf. Sprinkle the top with shredded Monterey Jack cheese, additional crumbled bacon, and more crispy fried onions.
  6. Place the casserole under a broiler, about 6 inches from the heat source. Broil for 3 minutes or until the cheese is melted and the top is golden brown.
  7. Let the casserole cool for a few minutes before serving. Serve with an extra drizzle of barbecue sauce if desired.
