These hearty Cowboy Breakfast Sandwiches are a delicious way to start your day. With layers of savory sausage, fluffy eggs, and melted cheese, all sandwiched between crispy Texas toast, they are sure to satisfy your morning hunger. Serve them with salsa for an extra kick.

Ingredients

  • 2 tablespoons butter
  • 1 pound breakfast sausage
  • 1/4 cup half-and-half
  • 8 slices Cheddar cheese
  • 8 slices of Texas toast
  • 1 jar of your favorite salsa
  • Salt and pepper
  • 6 large eggs

Instructions

  1. On a griddle over medium heat, cook the Texas toast with lots of butter until golden brown. Set aside.
  2. Form the sausage into 8 patties and cook them in a skillet over medium heat until browned and cooked through. Set aside.
  3. Whisk the eggs, half-and-half, salt, and pepper together. Melt butter on the griddle, pour the egg mixture in a rectangular shape, and cook until set. Flip to cook both sides. Cut into pieces to fit the toast.
  4. Layer each sandwich as follows: toast, a slice of cheese, a sausage patty, eggs, salsa, another sausage patty, cheese, and another slice of toast.
  5. Serve the sandwiches hot with extra salsa on the side if desired.
