Warm up your dinner table with this hearty Chilli Bean Bake topped with creamy soured cream mash and melted cheddar cheese—a comforting meal that’s both flavorful and satisfying.

  • 2 onions, chopped
  • 1 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp dried thyme
  • 2 tbsp mild chilli powder
  • 1 kg lean minced beef
  • 2 x 400g cans chopped tomatoes
  • 2 x 400g cans kidney beans, rinsed and drained
  • 2 x 330g cans sweetcorn, drained
  • 3 mixed peppers, chopped into chunks
  • 2 tbsp white or red wine vinegar
  • 2 tbsp brown sugar
  • 1 beef stock cube
  • 1.8 kg potatoes, chopped into large chunks
  • 300ml pot soured cream
  • 2 small bunches chives, snipped
  • 100g cheddar cheese, grated

Instructions

  1. Preheat the oven to 180°C (160°C fan, gas mark 4). Heat olive oil in a large oven-proof dish over medium heat. Add chopped onions and cook until softened.
  2. Stir in ground cumin, dried thyme, and mild chilli powder. Cook for 1-2 minutes until fragrant. Add lean minced beef and cook until browned.
  3. Pour in chopped tomatoes, rinsed kidney beans, and drained sweetcorn. Stir well to combine. Season with salt and pepper. Add chopped mixed peppers, vinegar, brown sugar, and crumbled beef stock cube. Stir and simmer for 15-20 minutes until slightly thickened.
  4. While the chilli bean mixture simmers, boil chopped potatoes in salted water until tender (about 15 minutes). Drain potatoes and return them to the pot. Mash until smooth. Stir in soured cream and snipped chives. Season with salt and pepper.
  5. Spoon the chilli bean mixture into a large oven-proof dish. Spread soured cream mash over the top evenly. Smooth with a spatula. Sprinkle grated cheddar cheese over the mash.
  6. Bake in the preheated oven for 25-30 minutes until golden and bubbling.
