Ingredients

1 large onion, diced
3 cloves garlic, minced
1 pound lean ground beef
½ pound lean ground pork
¾ cup uncooked long grain rice
1 medium head cabbage, chopped
28 oz canned diced tomatoes (with juices)
2 tablespoons tomato paste

Salt and pepper, to taste
Instructions
In a large pot, brown the diced onion, minced garlic, ground beef, and ground pork over medium-high heat until the meat is fully cooked. Drain any excess fat.
Stir in the chopped cabbage and cook for about 3 minutes, until it starts to soften.
Add the diced tomatoes (with their juices), tomato paste, beef broth, vegetable juice, uncooked rice, paprika, thyme, Worcestershire sauce, and bay leaf. Season with salt and pepper to taste. Stir well to combine.
Bring the soup to a boil, then reduce the heat to medium-low. Cover and simmer for 25-30 minutes, or until the rice is tender and cooked through.
