Ingredients

  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound boneless chuck roast, trimmed and cut into 1-inch pieces
  • 1 cup uncooked pearl barley
  • 2/3 cup onion, chopped
  • 1012 mushrooms, sliced
  • 1 tablespoon garlic
  • 810 cups water
  • 1 1/2 cups celery, thinly sliced
  • 1 or 2 large bay leaves
  • 1 1/2 cups carrots, cut thin
  • 2 tablespoons beef base

Instructions

  1. In a skillet, brown the beef over medium-high heat, stirring frequently until well-browned.
  2. Transfer the browned beef to your crock pot. Add in the carrots, celery, onion, mushrooms, beef base, water, garlic, and bay leaf.
  3. Set your crock pot to high heat and cook for 2 hours.
  4. After 2 hours, add the pearl barley to the crock pot. Reduce the heat to low and continue cooking until the vegetables and beef are tender.
  5. Stir in the salt and pepper to taste.
  6. Remove and discard the bay leaf before serving.
