  • 1 pound beef stew meat, cubed
  • 1 cup pearl barley
  • 6 cups beef broth
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large skillet over medium-high heat, brown the beef stew meat on all sides.
  2. Transfer the browned meat to a slow cooker.
  3. Add the pearl barley, carrots, celery, onion, garlic, bay leaf, tomato paste, salt, and pepper to the slow cooker.
  4. Pour in the beef broth and stir to combine.
  5. Cover and cook on Low for 8 hours or High for 4 hours, or until the beef is tender and the barley is cooked through.
  6. Once cooked, remove the bay leaf and adjust seasoning if needed.
  7. Serve hot, garnished with chopped fresh parsley.
