2 ripe bananas, mashed
1/4 cup honey or maple syrup
1/4 cup coconut oil, melted
1 tsp vanilla extract
1 1/2 cups rolled oats
1/2 cup almond flour
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup raisins or chocolate chips
1/4 cup chopped nuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the mashed bananas, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir well.
Add the rolled oats, almond flour, baking powder, cinnamon, and salt to the wet mixture. Mix until fully incorporated.
Fold in the raisins or chocolate chips and chopped nuts, if using.
Drop spoonfuls of the dough onto the prepared baking sheet and flatten each cookie slightly with the back of the spoon.
Bake for 15-20 minutes, or until the cookies are golden brown. Allow them to cool on a wire rack.
