  • ½ Tbsp fresh ground pepper
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • ½ tsp cayenne pepper (to taste)
  • 1 Tbsp dried oregano (or fresh)
  • 1 Tbsp dried rosemary (or fresh)
  • 1 tsp dried thyme (or fresh)
  • ½ tsp dried sage (or fresh)

Instructions

  1. Remove the tri-tip steak from the refrigerator at least 30 minutes before grilling to reach room temperature.
  2. Generously apply the seasoning rub to all sides of the steak, ensuring it's well-coated.
  3. Preheat your grill with high heat on one side and low on the other for indirect cooking.
  4. Sear the steak on the hot side for about 3-5 minutes per side until charred.
  5. Move the seared steak to the cooler side of the grill and close the lid, cooking until it reaches your desired internal temperature (118–120°F for rare, 128–130°F for medium-rare).
  6. Once cooked, remove from heat and let it rest under foil for 5-10 minutes before slicing against the grain.
