  • 4 swordfish steaks (46 ounces each)
  • 1/4 cup olive oil
  • 1 1/2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh parsley (chopped)
  • 2 teaspoons fresh thyme leaves
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon minced garlic
  • Lemon wedges for serving

Instructions

  1. Prepare the marinade by whisking together olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt, and pepper in a bowl or resealable bag. Reserve 1 tablespoon of marinade.
  2. Add minced garlic to the remaining marinade and stir well. Combine swordfish steaks with the marinade, cover or seal tightly, and refrigerate for at least 30 minutes (up to 8 hours).
  3. Preheat your grill to medium-high heat. Remove swordfish from marinade, scraping off excess.
  4. Grill swordfish for about 5-6 minutes per side until opaque throughout. Brush reserved marinade over fish before serving.
