These Grilled Shrimp Skewers are perfect for a summer cookout or a quick weeknight dinner. The citrusy marinade and charred thyme butter bring out the freshest flavors in every bite.

  • 1 pound extra-large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 4 sprigs fresh thyme
  • 1/4 cup butter, softened
  • 1 orange, cut into wedges

Instructions

  1. In a bowl, mix olive oil, lime juice, lime zest, orange juice, orange zest, minced garlic, salt, and pepper. Add the shrimp and toss to coat. Let marinate for 30-60 minutes in the refrigerator.
  2. Set your grill to medium heat.
  3. Thread the marinated shrimp onto skewers.
  4. Place the shrimp skewers, orange wedges, and thyme sprigs on the grill. Cook the shrimp until opaque, about 2-3 minutes per side. Grill the oranges until charred and the thyme until fragrant.
  5. Mix the charred thyme and a bit of orange zest into the softened butter.
  6. Spread the thyme-orange butter over the grilled shrimp and serve with the charred orange wedges.
