Ingredients
- 1.5 pounds boneless skinless chicken breasts or thighs
- 1/3 cup olive oil
- 3 tablespoons lemon juice
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 1/2 tsp onion powder
- 1 1/2 tsp garlic powder
- 1 1/2 tsp salt
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
Instructions
- In a mixing bowl, whisk together the olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, and Dijon mustard until well combined.
- Place the chicken in a freezer bag or glass container and pour the marinade over it. Seal the bag/container and turn to coat evenly.
- Marinate at room temperature for 30 minutes or refrigerate for up to 12 hours for enhanced flavor.
- Remove chicken from the marinade and let it rest at room temperature for about 15–30 minutes before cooking.
- Grill on medium-high heat for approximately 6–7 minutes per side until fully cooked (internal temperature of 165°F). Alternatively, bake at 375°F (190°C) for about 25–30 minutes.
