  • 30ml lemon juice
  • 60ml soy sauce
  • 45ml sesame oil
  • 1 tsp cardamom
  • 1 tsp thyme
  • ½ tsp black pepper
  • 1 clove garlic, minced

Instructions

  1. In a mixing bowl, combine water, lemon juice, soy sauce, sesame oil, cardamom, thyme, black pepper, and minced garlic.
  2. Place tuna steaks in a zip-lock bag and pour the marinade over them. Seal and marinate for 20 minutes, flipping once halfway.
  3. Heat a heavy skillet over medium-high heat. Remove tuna from the marinade and sear for about 2 minutes on each side, brushing lightly with remaining marinade.
  4. Check that the internal temperature reaches 52°C (125°F). Allow steaks to rest for 2 minutes before slicing.
