4 large portobello mushrooms
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
Salt and pepper, to taste
4 slices fresh mozzarella cheese
2 large tomatoes, sliced
1/4 cup fresh basil leaves, torn
Balsamic glaze, for drizzling (optional)
Fresh parsley, chopped, for garnish
Instructions
Preheat your grill to medium heat.
Clean the portobello mushrooms and remove the stems. Using a spoon, scrape out the gills from the mushroom caps.
In a small bowl, mix together the melted butter and minced garlic. Brush the garlic butter mixture over both sides of the mushroom caps. Season with salt and pepper.
Place the mushroom caps on the grill, gill side down. Grill for 4-5 minutes, until they start to soften.
Flip the mushrooms over and continue to grill for another 4-5 minutes, until they are cooked through and tender.
Remove the mushrooms from the grill and place them on a plate or serving platter.
Top each mushroom with a slice of fresh mozzarella cheese, followed by slices of tomato and torn basil leaves.
Return the mushrooms to the grill and cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
Remove the mushrooms from the grill and drizzle with balsamic glaze, if desired. Sprinkle with chopped fresh parsley before serving.
