Instructions

  1. In a bowl, beat the egg yolks with the granulated sugar and vanilla extract until pale and creamy.
  2. Sift the all-purpose flour, baking powder, and a pinch of salt into the egg yolk mixture. Mix gently until just combined.
  3. Gradually stir in the milk to the batter until smooth.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter, taking care not to overmix to maintain the fluffiness.
  6. Heat a non-stick pan or griddle over medium-low heat and lightly grease with butter or oil. Spoon about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to set. Carefully flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
