1/2 cup mayonnaise
2 tbsp white vinegar
1/2 tbsp fresh cracked white pepper
1/2 tbsp Creole mustard
1/2 tsp salt
2 tbsp sugar
2 large garlic cloves, pressed
2 tsp horseradish
1 tbsp lemon juice
1/2 tsp paprika
14 oz chicken tenders
2 tbsp vegetable oil
Salt and pepper to taste
2 large shallots, sliced
1 1/2 cups shredded Monterey Jack cheese
2 French bread subs
About 1/2 cup white BBQ sauce
Instructions
In a bowl, combine mayonnaise, white vinegar, white pepper, Creole mustard, salt, sugar, pressed garlic, horseradish, lemon juice, and paprika. Mix well and refrigerate until ready to use.
Season chicken tenders with salt and pepper. Heat vegetable oil in a sauté pan over medium-high heat. Cook chicken tenders until done, adding sliced shallots halfway through cooking. Remove from heat and let cool slightly.
Chop cooked chicken and place in a mixing bowl. Add cooked shallots, shredded Monterey Jack cheese, and prepared white BBQ sauce. Mix until well combined.
Slice French bread subs horizontally, without cutting all the way through. Divide the chicken mixture evenly among the subs, stuffing them generously. Sprinkle additional shredded cheese over the top of each sub.
Place the assembled subs on a baking sheet. Broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
Remove from oven and serve immediately, hot and delicious!
