  • 3 ounces fresh baby spinach, chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ cup almond meal
  • 2 lbs ground turkey
  • 3 garlic cloves, grated
  • 1 teaspoon sea salt
  • ½ teaspoon ground pepper
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, chopped spinach, grated garlic, eggs, almond meal, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined.
  3. Form the mixture into balls slightly larger than golf balls and place them on a greased, rimmed baking sheet.
  4. Freeze the meatballs for 15 minutes to firm up.
  5. After chilling, dampen your hands and re-roll the meatballs to smooth them out.
  6. Bake the meatballs for 20 minutes, or until they’re nearly cooked through. Switch to broil for 4 minutes to get a nice golden top.
  7. Let the meatballs cool slightly before serving.
