  • 1 tbsp smoked paprika
  • 4 skinless chicken thigh fillets
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 cup BBQ sauce
  • 4 brioche burger buns, split
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 1 large tomato, sliced
  • 1 cup shredded lettuce
  • 1 red onion, thinly sliced
  • 4 slices cheddar cheese
  • 1 tbsp sriracha
  • 1/2 tsp ground cayenne pepper
  • Pickles, to serve (optional)

Instructions

  1. Preheat your BBQ or grill pan to medium-high heat.
  2. In a bowl, place the chicken thigh fillets. Drizzle with olive oil and sprinkle with smoked paprika, ground cumin, ground coriander, and cayenne pepper. Toss to coat evenly.
  3. Cook the chicken on the BBQ or grill pan for 6-7 minutes on each side until cooked through and nicely charred. Brush with BBQ sauce during the last minute of cooking.
  4. Toast the brioche buns on the BBQ or grill pan for 1-2 minutes until golden.
  5. In a small bowl, mix the mayonnaise with sriracha.
  6. Spread the sriracha mayo on the bottom halves of the toasted buns. Layer with shredded lettuce, a slice of tomato, red onion slices, a slice of cheddar cheese, and a grilled chicken thigh fillet. Top with pickles if desired.
  7. Finish with the top half of the bun and serve immediately.
