1 whole chicken (about 2.6 lbs)
1 cup natural yogurt
2 tsp ground cumin
1 tsp smoked paprika
1 tsp ground coriander
1 tsp ground fenugreek
2 tsp ground turmeric
1 tbsp tomato purée
3 garlic cloves, crushed
1 lemon, zested and juiced
2 tsp honey
2 tsp cider vinegar
Instructions
Remove the backbone of the chicken and flatten it.
In a bowl, combine yogurt, ground cumin, smoked paprika, ground coriander, ground fenugreek, ground turmeric, tomato purée, crushed garlic, lemon zest and juice, honey, and cider vinegar. Mix well.
Rub the marinade all over the chicken, ensuring it's coated thoroughly. Marinate for at least 1 hour, ideally up to 24 hours in the refrigerator.
Preheat your BBQ grill or oven. If using a BBQ grill, start with the chicken breast-side down. Cook until the juices run clear and the internal temperature reaches 160°F (about 70°C). This usually takes about 45-60 minutes, depending on your cooking method and equipment.
Once cooked, let the chicken rest for a few minutes before slicing. Serve with lemon wedges for squeezing over the chicken.
