This Spiced Roast Chicken with Za’atar Yogurt is a flavorful dish featuring a perfectly roasted chicken seasoned with a blend of spices and served with a creamy, tangy yogurt sauce. It’s aromatic and satisfying, making it a great centerpiece for any meal.

  • 1 whole chicken (about 45 lbs)
  • 2 teaspoons ground coriander
  • 2 tablespoons za'atar spice blend
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 cup plain Greek yogurt
  • 1 teaspoon ground turmeric
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 teaspoons ground cumin
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels and rub olive oil all over the chicken, including under the skin.
  3. In a small bowl, combine ground cumin, ground coriander, smoked paprika, ground turmeric, salt, and pepper. Rub this spice mixture evenly over the chicken, including inside the cavity.
  4. Place the seasoned chicken in a roasting pan or on a baking sheet. Roast in the preheated oven for 1 to 1¼ hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  5. While the chicken roasts, mix Greek yogurt, za'atar spice blend, lemon juice, minced garlic, salt, and pepper in a bowl.
  6. Let the chicken rest for 10 minutes before carving. Serve with za'atar yogurt drizzled over the chicken or on the side, garnished with chopped parsley or cilantro.
