  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 lb shallots, peeled
  • 1 tsp dried rosemary
  • 1 whole chicken, cut into pieces (about 34 lbs)
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 cup white wine (optional)
  • 4 cloves garlic, minced
  • 1 tsp dried thyme

Instructions

  1. In a small bowl, combine the olive oil, lemon juice, minced garlic, dried thyme, dried rosemary, salt, and black pepper to prepare the marinade.
  2. Rub the marinade all over the chicken pieces, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour, or overnight for enhanced flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Place the peeled shallots in a large roasting pan.
  5. Lay the marinated chicken pieces on top of the shallots in the roasting pan.
  6. Pour the chicken broth and white wine (if using) into the pan.
  7. Roast in the preheated oven for about 45-50 minutes, or until the chicken is fully cooked, golden brown, and the shallots are tender.
  8. Allow the chicken and shallots to rest for a few minutes before serving. Serve with the caramelized shallots and pan juices.
