  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1/2 cup peas and carrots
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until soft, about 5 minutes. Stir in the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the rice to the skillet. Cook, stirring frequently, until the rice turns lightly golden brown, about 3-4 minutes.
