This Chicken Taco Marinade is a flavorful blend of lime juice, garlic, and spices that infuses boneless chicken thighs or breasts with zesty taste. Perfect for grilling, it ensures juicy and tender chicken with a delightful char. Ideal for taco night or any outdoor gathering.

  • ¼ cup fresh lime juice
  • 1 teaspoon lime zest
  • 2 teaspoons minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cornstarch
  • ½ teaspoon dried oregano
  • 1¼ teaspoons ground chili powder
  • ½ cup olive oil
  • 1.25 to 1.5 lbs boneless skinless chicken thighs or breasts
  • 2 teaspoons ground cumin
  • Fine sea salt
  • Freshly ground black pepper

Instructions

  1. Trim excess fat from the chicken and place it in a large resealable bag.
  2. In a bowl, whisk together olive oil, lime juice, lime zest, minced garlic, cumin, paprika, onion powder, chili powder, oregano, cornstarch, salt, and pepper until well combined. Reserve 2 tablespoons of the marinade.
  3. Pour the remaining marinade into the bag with the chicken, seal, and massage to coat evenly. Refrigerate for at least 30 minutes, preferably 2-3 hours.
  4. Preheat the grill to medium-high heat and oil the grill grates.
  5. Remove chicken from the marinade and grill for 4-6 minutes per side until the internal temperature reaches 165°F.
  6. Baste the chicken with the reserved marinade while grilling.
  7. Transfer grilled chicken to a plate, cover with foil, and let it rest for 5-10 minutes before serving.
