Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 1 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 2 large eggs
  • Juice of 1 lemon
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup milk
  • Lemon slices, for garnish

Instructions

  1. Season the chicken breasts with salt and freshly ground black pepper.
  2. Place flour in a shallow dish. In another dish, whisk together eggs, milk, and grated Parmesan cheese.
  3. Dredge each chicken breast in flour, dip into the egg mixture, then return to the flour to coat.
  4. Heat butter and olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 4-5 minutes per side. Remove from skillet.
  5. In the same skillet, add minced garlic and cook until fragrant. Pour in chicken broth and white wine, bring to a simmer, and cook until slightly reduced.
  6. Stir in lemon juice and chopped parsley. Return chicken to skillet, coat with sauce, and heat through.
  7. Serve garnished with lemon slices and additional parsley.
