These Broccoli Cheddar Chicken Rollups are a delicious and satisfying dish that combines tender chicken breasts with a creamy broccoli and cheddar filling, all coated in a crunchy cheddar cracker crust. Perfect for a family dinner or meal prep, these rollups are both nutritious and flavorful.

  • 3 ½ cups broccoli, finely chopped
  • 2 cups shredded cheddar cheese
  • 8 oz cream cheese, softened
  • 3 chicken breasts
  • 1 cup all-purpose flour
  • 14 oz cheddar crackers, crushed
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Microwave 1½ cups of finely chopped broccoli for 1 minute. In a small bowl, combine this broccoli with cheddar cheese, garlic powder, onion powder, and softened cream cheese. Mix well and set aside.
  2. On a cutting board, butterfly each chicken breast to create 6 thinner cutlets. Cover with plastic wrap and tenderize with a rolling pin or heavy pan. Remove plastic wrap and season each cutlet with salt and pepper.
  3. Spread a scoop of the broccoli cheddar mixture onto each chicken cutlet. Roll up each cutlet starting from the tapered end, securing with 2 toothpicks.
  4. Preheat your oven to 325°F and line a baking sheet with parchment paper. Crush the cheddar crackers into a coarse crumb and mix with the remaining chopped broccoli. Pour into a large bowl. Place flour into a medium bowl and whisk eggs in another medium bowl.
  5. Using tongs, dredge each chicken roll in flour, then dip in eggs, and finally coat with the broccoli cracker mixture. Repeat until all chicken rolls are coated.
  6. Place the coated chicken rollups on the prepared baking sheet. Bake for 40-45 minutes, or until the chicken is cooked through and golden brown.
  7. Let the chicken cool slightly before removing the toothpicks. Serve warm.
