Beef Bourguignon is a classic French dish that features tender beef simmered in a rich red wine sauce, complemented by hearty vegetables and aromatic herbs. This comforting stew is perfect for a cozy dinner and showcases the depth of flavor that comes from slow cooking.

  • 1.5 kg (3 lbs) beef chuck, cut into 2-inch cubes
  • Salt and black pepper to taste
  • 4 tablespoons olive oil
  • 4 slices turkey bacon, diced
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 3 cups red wine (Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 2 cups pearl onions
  • 2 cups mushrooms, sliced
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season beef cubes with salt and black pepper.
  2. Heat 2 tablespoons of olive oil in a Dutch oven over medium heat. Cook diced bacon until crispy. Remove and set aside. Brown beef cubes in batches until seared on all sides. Remove and set aside.
  3. Add remaining olive oil to the pot. Sauté sliced onion and carrots until softened. Stir in minced garlic and tomato paste, cooking for another minute.
  4. Sprinkle flour over vegetables, stirring to coat. Gradually pour in red wine, scraping up browned bits. Add beef broth, bay leaf, and dried thyme. Stir to combine.
  5. Return beef and bacon to the pot. Bring to a boil. Reduce heat to low, cover, and simmer for 2 hours until beef is tender.
  6. In a skillet, melt butter over medium heat. Sauté pearl onions and mushrooms until golden brown. Add to beef mixture during the last 30 minutes of cooking.
  7. Remove bay leaf. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
