1 lb boneless, skinless chicken breasts, diced
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
2 cloves garlic, minced
1/4 cup cilantro, chopped
1/2 cup cucumber, diced
1/2 cup green onions, chopped
1/2 cup carrots, shredded
1 tablespoon sesame oil
1/4 cup peanuts, chopped
1 tablespoon sesame seeds
2 tablespoons soy sauce
8 small flour or corn tortillas
Lettuce leaves (optional)
Sriracha or chili sauce (optional)
Instructions
In a bowl, combine soy sauce, hoisin sauce, sesame oil, rice vinegar, garlic, and ginger. Add diced chicken to the bowl, mixing well to coat. Marinate for at least 30 minutes.
Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Stir in green onions and cook for an additional 1-2 minutes.
While the chicken is cooking, prepare the toppings: shred the carrots, dice the cucumber, chop the peanuts, and cilantro.
Warm the tortillas in a dry skillet or microwave. Lay a lettuce leaf on each tortilla, if using. Spoon the cooked chicken onto each tortilla. Top with shredded carrots, diced cucumber, chopped peanuts, and cilantro. Sprinkle with sesame seeds. Drizzle with sriracha or chili sauce, if desired.
