8 slices of bacon
1 teaspoon smoked paprika
Toothpicks
4 boneless, skinless chicken breasts
1 cup shredded cheddar cheese
1 teaspoon garlic powder
4 jalapeños, seeded and diced
1 teaspoon onion powder
Salt and pepper to taste
8 oz cream cheese, softened
BBQ sauce for brushing
Instructions
Preheat your smoker to 250°F (121°C). In a medium bowl, combine softened cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper.
Butterfly each chicken breast by slicing it horizontally to create a pocket without cutting all the way through. Stuff each chicken breast with the cream cheese mixture.
Wrap each stuffed chicken breast with 2 slices of bacon, securing with toothpicks if needed. Place the chicken bombs in the smoker and smoke for 2-2.5 hours, until the chicken reaches an internal temperature of 165°F (74°C) and the bacon is crispy.
During the last 30 minutes of smoking, brush the chicken bombs with BBQ sauce for added flavor.
Remove from the smoker and let rest for a few minutes before serving.
