1/3 cup freeze-dried blueberries, chopped
1 large egg, room temperature
1/2 teaspoon cream of tartar
3/4 cup granulated sugar
1/2 teaspoon kosher salt
3/4 teaspoon baking soda
3/4 cup unsalted butter, room temperature
2 1/4 cups all-purpose flour, spooned and leveled
3/4 teaspoon vanilla extract
1/4 cup coarse sanding sugar, for topping
1 to 2 tablespoons fresh lemon zest (to taste)
1/2 cup light brown sugar, packed
Instructions
In the bowl of a stand mixer fitted with the paddle attachment, combine the granulated sugar, light brown sugar, and lemon zest. Massage the zest into the sugars with your fingers for about 20 seconds to enhance the lemon flavor.
Add the room temperature butter to the sugar mixture and beat on medium-high speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl as needed.
Mix in the egg and vanilla extract on low speed until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and kosher salt. Gradually add this dry mixture to the butter mixture on low speed until just incorporated.
Gently fold in the chopped freeze-dried blueberries.
Chill the dough in the refrigerator for 30 minutes. Preheat your oven to 350°F (177°C) during this time.
Roll the chilled dough into balls and coat each in coarse sanding sugar. Place the dough balls on lined baking sheets, spacing them 2-3 inches apart.
Bake the cookies for 8-9 minutes or until the edges are golden brown. Allow them to cool on the baking sheets for 5-10 minutes before transferring them to a wire rack to cool completely.
