These Strawberry Cheesecake Quesadillas are a delightful twist on traditional quesadillas, featuring a creamy strawberry filling encased in crispy tortillas. Perfect for a sweet snack or dessert, they are easy to make and sure to satisfy your cravings.

  • 4 tortillas (6-inch)
  • 1/2 cup cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup diced strawberries
  • 2 tbsp butter, softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon
  • Strawberry sauce for dipping

Instructions

  1. In a mixing bowl, combine the softened cream cheese, 2 tablespoons of sugar, and vanilla extract. Beat until smooth. Gently fold in the diced strawberries.
  2. Spread half of the strawberry cream cheese mixture onto one tortilla. Place another tortilla on top, pressing down lightly.
  3. Heat a pan over medium-high heat and add 1 teaspoon of butter. Once melted, place the assembled tortilla in the pan, cream cheese side up. Spread 1 additional teaspoon of butter on the top tortilla and flip it over, butter side up. Cook each side for 2-3 minutes, or until golden and crispy.
  4. Mix the cinnamon and 1 teaspoon of sugar. Sprinkle the mixture over the cooked quesadillas.
  5. Let the quesadillas sit for 2 minutes before slicing. Serve with strawberry sauce for dipping.
