1 box strawberry cake mix
1 teaspoon vanilla extract
2 large eggs
1 cup powdered sugar
2 tablespoons lemon juice
1 tablespoon strawberry jam
Zest of 1 lemon
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, and vanilla extract. Stir until well mixed and a dough forms.
Using a cookie scoop or spoon, form the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
