1 lb spaghetti
1 cup shredded mozzarella cheese
1/2 cup sour cream
1 can (10 oz) Rotel tomatoes and green chilies, undrained
1/2 cup diced onion
1 cup chicken broth
1 can (10.5 oz) cream of chicken soup
1/2 cup diced green bell pepper
2 cups shredded cheddar cheese, divided
1 can (10.5 oz) cream of mushroom soup
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp cayenne pepper (adjust to taste)
1/2 tsp onion powder
Salt and pepper to taste
Red pepper flakes (optional, for garnish)
2 cups cooked chicken, shredded
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Drain and set aside.
Heat a large skillet over medium heat and sauté the diced onion and green bell pepper until softened, about 5 minutes.
In a large bowl, mix together the Rotel tomatoes and green chilies, cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, garlic powder, onion powder, paprika, and cayenne pepper until well combined.
Stir in the cooked spaghetti, shredded chicken, sautéed onions, and bell peppers into the sauce. Add 1 cup of shredded cheddar cheese and 1 cup of shredded mozzarella cheese. Mix until everything is well coated.
Pour the mixture into the prepared baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly on top.
Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
Allow to cool for a few minutes before serving. Garnish with red pepper flakes if desired.
