  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 ounces penne pasta
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Pour in the diced tomatoes, cream of chicken soup, and chicken broth. Add garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  4. About 30 minutes before serving, cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  5. Shred the chicken in the slow cooker using two forks.
  6. Stir the cooked pasta into the slow cooker, mixing it well with the sauce and chicken. Sprinkle shredded mozzarella cheese over the top and cover for an additional 10 minutes, or until the cheese has melted.
  7. Serve hot, garnished with fresh parsley if desired.
