This Easy Shepherd’s Pie is a comforting dish made with lamb mince, vegetables, and topped with creamy mashed potatoes. It’s perfect for a cozy dinner, offering a hearty and satisfying meal for the whole family.

  • 500g lamb mince
  • 1 onion, finely chopped
  • 1/2 cup grated tasty cheese
  • 1 tablespoon olive oil
  • 2 carrots, peeled, finely chopped
  • 2 tablespoons tomato paste
  • 1/2 cup frozen peas
  • 2 garlic cloves, crushed
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef stock
  • 2 tablespoons plain flour
  • 4 cups mashed potato

Instructions

  1. Preheat the oven to 200°C/180°C fan-forced. Heat olive oil in a large frying pan over medium-high heat. Add chopped onion and carrot. Cook for about 5 minutes until softened. Add crushed garlic and cook for another minute until fragrant. Add lamb mince and cook, breaking it up with a wooden spoon, until browned. Stir in tomato paste and cook for 1 minute. Add beef stock and Worcestershire sauce. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes until slightly thickened. Sprinkle with flour and stir to combine.
  2. Spoon the lamb mixture into a 6-cup-capacity baking dish. Top with mashed potato and spread it evenly over the lamb mixture. Sprinkle with frozen peas and grated cheese.
  3. Bake for 20 to 25 minutes until golden and heated through.
