This Sautéed Asparagus and Mushrooms dish is a quick and healthy side that combines tender asparagus and savory mushrooms, enhanced with garlic and butter. Perfect for complementing any meal or served over rice or pasta.

  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 8 oz asparagus
  • Salt to taste
  • Black pepper to taste
  • 8 oz mushrooms, sliced
  • 1 teaspoon liquid aminos or soy sauce

Instructions

  1. Snap off the woody ends of the asparagus and discard them. Cut the asparagus into 2-inch pieces.
  2. Heat the olive oil over medium heat in a large skillet. Add the asparagus and cook for 3-4 minutes, just until it starts to soften.
  3. Toss the sliced mushrooms with the liquid aminos (or soy sauce). Add them to the pan with the asparagus and cook until the mushrooms are tender.
  4. Push the asparagus and mushrooms to the sides of the pan. Add the butter and minced garlic to the center. Cook for about 30 seconds, until the garlic is fragrant. Stir the garlic into the vegetables and cook for an additional minute.
  5. Season with salt and black pepper to taste. Serve hot as a side dish or as a topping for rice or pasta.
