⅓ cup all-purpose flour
⅓ cup granulated sugar
½ tsp cinnamon
1 cup granulated sugar
2 large peaches, cut into 1/2-inch pieces (about 2 cups), divided
2 cups all-purpose flour
1 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 eggs
⅓ cup plain yogurt (or vanilla yogurt)
⅓ cup vegetable oil (or olive oil, canola oil)
Instructions
In a small bowl, mix the flour, sugar, and cinnamon for the streusel topping. Add the cold butter and rub it into the mixture until crumbly. Set aside.
Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. Add the peaches, reserving about ¾ cup for topping, and stir to coat them in the flour mixture.
In a medium bowl, whisk the eggs, yogurt, and oil until smooth. Pour the wet mixture into the dry ingredients and stir until just combined.
Divide the batter evenly among the muffin cups, filling each about ¾ full. Top with the reserved peach pieces and a spoonful of the streusel topping.
