  • 1 cup cherry tomatoes, halved
  • 1 cup milk
  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1/2 cup grated Parmesan cheese
  • 1 cup orzo (risoni)
  • 1 small onion, diced
  • 2 cups chicken broth
  • 2 garlic cloves, minced
  • 1 cup baby spinach
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season diced chicken with salt and pepper, then cook until browned. Remove chicken from the skillet and set aside.
  2. In the same skillet, add diced onion and minced garlic. Sauté until fragrant.
  3. Stir in orzo, chicken broth, and milk. Bring the mixture to a simmer.
  4. Add halved cherry tomatoes to the skillet. Cook until the orzo is tender and most of the liquid is absorbed.
  5. Stir in baby spinach until wilted. Return the cooked chicken to the skillet and mix well.
  6. Sprinkle grated Parmesan cheese over the top. Stir until the cheese is melted and incorporated.
  7. Garnish with fresh basil. Serve hot and enjoy!
