This One-Pot Cajun Chicken and Rice is a flavorful and hearty dish that combines tender chicken thigh fillets with aromatic vegetables, long-grain rice, and a zesty Cajun seasoning. It’s a simple and satisfying meal that is perfect for busy weeknights, offering a delightful blend of spices and textures all cooked in one pot.

  • 500g chicken thigh fillets, cut into 2cm pieces
  • 1 tbsp olive oil
  • 1 red capsicum, finely chopped
  • 1 brown onion, finely chopped
  • 2 celery sticks, finely chopped
  • 2 garlic cloves, crushed
  • 1 cup long-grain rice
  • 1 tbsp Cajun seasoning
  • 400g can diced tomatoes
  • 2 cups chicken stock
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • Lemon wedges, to serve

Instructions

  1. Heat olive oil in a large, deep frying pan or casserole pot over medium-high heat. Add chicken and cook for 5 minutes until browned.
  2. Add onion, capsicum, and celery. Cook for 5 minutes until softened. Stir in garlic and Cajun seasoning, cooking for another minute until fragrant.
  3. Stir in rice, diced tomatoes, and chicken stock. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  4. Mix in frozen peas and cook for 2 minutes until heated through.
  5. Sprinkle with chopped parsley and serve with lemon wedges.
