200g pasta (penne or fusilli)
1 pint cherry tomatoes, halved
3 garlic cloves, minced
2 tbsp olive oil
2 cups vegetable broth
1 cup fresh mozzarella, cubed
1/4 cup fresh basil leaves, chopped
Salt and pepper, to taste
Balsamic glaze, for drizzling
Instructions
In a large skillet, combine pasta, cherry tomatoes, minced garlic, olive oil, and vegetable broth.
Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
Remove the skillet from heat. Stir in cubed mozzarella and chopped basil until well combined. Season with salt and pepper according to taste.
Drizzle with balsamic glaze just before serving to enhance the flavors.
