Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ cup butter (unsalted)
  • 1 ⅔ cups sugar
  • ½ cup shortening (not butter flavored)
  • 1 teaspoon cream of tartar
  • ⅛ teaspoon salt
  • 3 egg yolks
  • ½ teaspoon vanilla

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large bowl, cream together the butter and shortening until well combined. Add the sugar, baking soda, cream of tartar, and salt. Beat until fluffy, scraping down the sides of the bowl as needed.
  3. Mix in the egg yolks and vanilla extract until fully incorporated.
  4. Gradually blend in the flour until the dough comes together.
  5. Divide the dough into 24 even pieces and roll each piece into a ball. Place the balls on a baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-17 minutes, or until the cookies are just set and not yet browned.
  7. Allow the cookies to cool on the baking sheet for about 3 minutes before transferring them to a wire rack to cool completely.
