  • 5 pounds potatoes (red, yellow, or white)
  • ¾ cup chicken broth
  • ¼ cup melted butter
  • ¼ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons cream cheese (optional)
  • Warm milk or cream (to taste)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)

Instructions

  1. Peel the potatoes and cut them into 1-inch chunks.
  2. Place the potato chunks in the bottom of a 4-quart slow cooker. Pour in the chicken broth and sprinkle with garlic powder and onion powder.
  3. Cover and cook on high for 3-4 hours or on low for 6-7 hours, until the potatoes are fork-tender. Stir the potatoes briefly once an hour.
  4. Once tender, mash the potatoes using a hand masher or an electric hand mixer until smooth.
  5. Stir in the melted butter, sour cream, and fresh parsley. If using, add cream cheese. Season with salt and pepper to taste.
  6. Gradually add warm milk or cream until the potatoes reach your desired consistency.
  7. Serve immediately or keep on warm until ready to enjoy.
