Ingredients

Scale
  • 2 cups heavy whipping cream
  • 2 cups crushed graham crackers
  • 4 large ripe mangoes, peeled and sliced
  • 1/2 cup melted butter
  • 1/2 cup crushed toasted coconut
  • 1/2 cup condensed milk
  • 1/4 cup granulated sugar
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the Crust: In a medium bowl, mix the crushed graham crackers with the melted butter until the mixture is well combined. Press this mixture evenly into the bottom of a 9×13-inch baking dish to form the crust.
  2. Whip the Cream: In a large bowl, whip the heavy whipping cream with the granulated sugar until stiff peaks form. Gently fold in the condensed milk until fully incorporated.
  3. Assemble the Cake: Spread a layer of the whipped cream mixture over the graham cracker crust. Arrange a layer of mango slices on top of the whipped cream mixture. Repeat the layers, ending with a final layer of the whipped cream mixture on top.
  4. Add the Toppings: Sprinkle the top of the cake with crushed toasted coconut.
  5. Chill and Serve: Chill the cake in the refrigerator for at least 4 hours or overnight to allow it to set. Before serving, garnish with fresh mint leaves.
