Mixed Chowmein is a delightful stir-fried noodle dish featuring a colorful mix of vegetables and optional chicken, all tossed in a savory sauce. It’s a quick and satisfying meal that’s perfect for any occasion.

  • 200g chowmein noodles
  • 1 cup mixed vegetables (carrots, bell peppers, cabbage, spring onions)
  • 1 cup cooked chicken, shredded (optional)
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp vinegar
  • 1 tsp sugar
  • 1/2 tsp black pepper powder
  • Salt to taste
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions

  1. Cook noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and ginger. Sauté for a minute until fragrant.
  4. Stir in mixed vegetables (carrots, bell peppers, cabbage, spring onions). Stir fry for 3-4 minutes until vegetables are tender-crisp.
  5. Optionally, add shredded cooked chicken to the pan. Stir fry for another minute.
  6. In a small bowl, combine soy sauce, oyster sauce, vinegar, sugar, black pepper powder, and salt.
  7. Add cooked noodles to the pan. Pour sauce mixture over noodles and vegetables.
  8. Toss everything together until well combined and heated through.
  9. Garnish with fresh cilantro or green onions.
  10. Serve hot and enjoy your delicious Mixed Chowmein!
