Ingredients

Scale
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 1 lb ground beef
  • 6 flour tortillas (8-inch)
  • 1 packet taco seasoning
  • 1 can (16 oz) refried beans
  • 1/2 cup water
  • 1/4 cup sliced black olives
  • 1 cup sour cream
  • 1/4 cup chopped green onions
  • Fresh cilantro, for garnish
  • 1 diced tomato

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat. Add taco seasoning, salsa, and water to the skillet. Bring to a simmer and cook until the mixture thickens, about 5 minutes.
  3. In a greased 9×13 inch baking dish, lay two tortillas, overlapping if necessary. Spread half of the refried beans over the tortillas, followed by half of the meat mixture, and sprinkle with 1/3 of the cheese. Repeat the layering with two more tortillas, the remaining refried beans, the remaining meat mixture, and another 1/3 of the cheese. Top with the final two tortillas. Spread the sour cream over the top, then sprinkle with the remaining cheese, green onions, black olives, and diced tomato.
  4. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and slightly golden.
  5. Garnish with fresh cilantro before serving.
