1 sweet onion, chopped

3 garlic cloves, chopped
14 oz can fire-roasted diced tomatoes
½ teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon garlic powder

Salt and pepper, to taste
1 small head green cabbage, cored and chopped
2 cups shredded cheddar/jack cheese
1 orange bell pepper, seeded and chopped
Instructions
Heat oil in a large pan over medium-high heat. Add ground beef, onion, and orange pepper. Cook until beef browns and onions turn translucent. Add garlic and sauté for 1 more minute.
Stir in fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Top with chopped cabbage. Cover and cook for 15-20 minutes until cabbage softens.
Sprinkle shredded cheese on top, cover, and cook until melted.
