1 cup long-grain white rice

1 medium onion, finely chopped
2 cups chicken broth

Instructions
Season the chicken thighs with 1 teaspoon salt and 1/2 teaspoon black pepper on both sides. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the chicken thighs in the skillet, skin side down, and cook until the skin is crispy and golden brown, about 5-7 minutes. Flip the chicken and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add 1 tablespoon of olive oil. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the rice and cook for 1-2 minutes to toast it slightly.
Pour in the chicken broth and water, stirring to combine. Add the lemon slices, dried thyme, oregano, basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Nestle the chicken thighs back into the skillet on top of the rice. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice is cooked and the chicken is fully cooked through.
Remove the skillet from the heat and let it sit, covered, for 5 minutes. Garnish with freshly chopped parsley before serving.
