  • 1 cup garlic cloves, peeled
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon kosher salt
  • 1 tablespoon sugar
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a pot, combine white vinegar, water, kosher salt, sugar, black peppercorns, bay leaf, and crushed red pepper flakes (if using). Bring the mixture to a boil.
  2. Add peeled garlic cloves to the boiling brine. Reduce heat and simmer for 2 minutes to slightly soften the garlic.
  3. Carefully transfer the garlic cloves and brine into a clean glass jar. Allow the mixture to cool to room temperature, then seal the jar and refrigerate.
