  • 1 1/2 cups granulated sugar
  • 4 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Wash the blueberries thoroughly and remove any stems or leaves. In a large bowl, crush the blueberries with a potato masher or the back of a spoon until they are mostly broken down.
  2. In a large saucepan, combine the crushed blueberries, granulated sugar, lemon juice, and lemon zest. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture begins to boil. Reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally, until the jam thickens. If desired, stir in the vanilla extract in the last few minutes of cooking.
  3. Remove the saucepan from heat and let the jam cool slightly. Carefully pour the jam into sterilized jars, leaving about 1/4 inch of space at the top. Seal the jars tightly and let them cool completely at room temperature.
  4. Store the blueberry jam in the refrigerator for up to 3 weeks, or process in a water bath for longer storage.
