1 cup shredded cheddar cheese
1 small onion, diced
Fresh parsley, chopped (optional)
1 can (14.5 oz) diced tomatoes, drained
Salt and pepper to taste
1 cup white rice, uncooked
2 cups beef broth
1 can (10.5 oz) condensed cream of mushroom soup
1 lb ground beef
1 tsp garlic powder
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until it's no longer pink. Drain any excess fat.
Add the diced onion to the skillet and cook until it's translucent, about 5 minutes.
Stir in the garlic powder, salt, and pepper. Mix well.
Add the uncooked rice, cream of mushroom soup, diced tomatoes, and beef broth to the skillet. Stir until everything is well combined.
Transfer the mixture to a greased 9×13-inch baking dish, spreading it out evenly.
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese over the top, and return the dish to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley if desired, and serve hot.
