  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup almonds
  • 1 tablespoon ginger, finely minced
  • 3 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon dry sherry or rice wine
  • 1 tablespoon cornstarch
  • 1 garlic clove, minced
  • 1/4 cup chicken stock
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, mix soy sauce, sherry (or rice wine), and cornstarch. Add chicken pieces, coat well, and set aside to marinate for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a wok or skillet over medium heat. Stir-fry almonds until golden brown, then remove from the pan and set aside.
  3. In the same wok or skillet, add the remaining tablespoon of vegetable oil. Add minced ginger, garlic, and marinated chicken. Stir-fry until the chicken is cooked through.
  4. Add chopped green onions, chicken stock, and sugar to the chicken in the skillet. Stir well to combine. Return the stir-fried almonds to the skillet. Drizzle sesame oil over the dish and stir to incorporate.
  5. Serve hot and enjoy this flavorful ginger chicken with almonds!
